Preparation

Wash rice and rinse several times until water runs clear and starch is removed. Put it into a medium-sized saucepan and add one cup of water. Put pan on stove, add half the olive oil, a little low-sodium salt and the saffron, bring to boil in a covered pan and then simmer for 10 minutes until the water is absorbed and the rice cooks in the steam to become fluffy, Add chopped olives while the rice is steaming. Remove skin from apples and then grate them onto the rice towards the end of the 10 minutes. Now add the Red Yeast rice extract and mix thoroughly. Put rice on a serving dish.

At the same time, put about ½ cup of water into another pan and bring to the boil. Put salmon with skin into water, reduce heat and cook for 10 minutes. Remove salmon from water, remove skin and put salmon on top of cooked rice. Pour the rest of olive oil and the juice of fresh lime over the salmon.

Garnish with the guava, the tomatoes and the spring onions.

Rice with Salmon

This dish is very helpful in reducing cholesterol and promotes balanced digestion. You may use brown rice if you prefer it to Basmati.

Ingredients (for one person)

1 cup of Basmati or brown rice

¼ cup of olive oil

A little low-sodium salt and black or white pepper 30 to 50 grams of olives, washed and chopped

¼ teaspoon of ground saffron

1 or 2 cooking apples, with the skin removed

1 fresh lime

1 teaspoon of Red Yeast rice extract. You can get this from health food shops.

1 piece of fresh salmon

Some fresh ripe tomatoes and spring onions for garnish

1 ripe fresh guava, also for garnish. You may use a tinned guava, but in that case, wash it well first.
